Pasta (with hidden veg)

Carb Friday!! But it’s ok since the sauce has hidden veg😂

Ingredients

Oil

2 cloves garlic chopped roughly

1 carrot, peeled and grated 

1/2 red pepper (capsicum) , cut into chunks

1/2 large onion (or 1 medium onion) cut into small chunks

Salt pepper to taste

1/4-1/2 tsp chilli flakes

1 tin choppped tomatoes

2tbsp chopped parsley 

Large Pinch sugar

1. Heat a little oil add your onions , cook for a minute

2. Add you carrots peppers and garlic cook until soft – 1-2 mins

3. Add your tomato tin with pepper , chilli flakes , sugar and parsley with a tin of water 

4. Let this cook for 5-10 mins 

5. Liquidise in BLENDER 

Cook your pasta according to the instructions

Reserve 1 mug full of the pasta water once it is boiled.

Drain pasta , return to the pot with the sauce you have made and the 1/2 mug of reserved pasta water

Cook pasta in the sauce for a few minutes until the water is absorbed 

Add more pasta water if you think it’s too thick

– add 1/4 cup grated cheese and mix through

Adjust salt to your liking 

Toppings in picture:

Crumbled croutons parsley and cheese

We Served ours with a side salad

Tip- 

to get the smoothiest sauce blend for 1-2 minutes , not just a few seconds, avoid hand blender as you may be standing there for while!

Once blended , the sauce will look thick but you will be adding the pasta water- use more if you would like a thinnier sauce.

You can leave the sugar out as the carrots add sweetness – but my tomato tins aren’t sweet enough!(tip from when we went to Italy!)

Other sides that go well – coleslaw, garlic bread, crispy mushrooms, grilled broccoli my fav beetroot!

Salt- taste after the cheese and pasta water (as it might be seasoned!) it’s important to get your balance right for salt for your own preference here! 

Chilli flakes- it sounds like a pinch but once you blend the heat intensifies!

Poached Eggs

veryone’s favourite in the house- poached eggs!

I don’t use salt , no vinegar , no swirling water pools – simple batch made poached eggs. Medium size pot filled with half water, boil the water – then put onto a low heat- you should see a few bubbles at the bottom of the pan. Always crack the eggs in the ramekin (small bowl) and with a swift movement place in the water.

You’ll be tempted to put the heat higher as the eggs don’t look like they’re doing much but be patient!

Best tips- use fresh eggs they are less runnier (you can sieve these if they are) , consistency for a runny yolk the whites should feel like marshmallows (I can’t remember who told me this!) . Ours take 2 and a half minutes for a runny yolk x

Apple Tart

Cheats Apple tart! It’s ok to have before dinner right? 

When u have far too many apples! Fresh apples from our neighbours Apple tree 🌳perfect to take to someone’s house after lockdown 😂

*pre bake ready made short crust pastry as per packet instructions 

*Pour in 1 ready made custard tin/carton (I normally would make this but its a lazy day!)

*Peel core and slice 4-5 apples, place in some boiling water with 4-5drops of lemon juice and pop in the microwave for 30 seconds to soften

*Drain and pat dry

*Push into the custard gently

*Dust with a little cinnamon

*Bake for 25-30 mins (or until pastry cooked through)

*Whilst warm brush with apricot jam, if you are struggling pop the jam in the microwave for a few seconds until it melts down before using 

*Let the Apple tart cool slightly before serving (the custard will run if served while hot)

*Serve with fresh fruit or ice cream

Dynamite Prawns

Dynamite prawns for dinner!

Easy simple recipe! The kids help make this one! One made the sauce the other the flour topping!

Extras: we made double sauce 1/2 in the prawns and half to serve , spring onion on top does make a difference . We added 1/4 tsp chilli flakes to the prawns and extra garlic powder to the flour x 

Serving suggestions:

Chips and salad

Coleslaw and wedges

Stir fry rice /veg noodles 

Salad topped with prawns 

Tips: make sure the oil is hot, if it’s cold you can over cook the prawns to get a golden colour and the prawns will be tough. I let the prawns drain on a paper towel and then put them all in a bowl to toss with the sauce for extra crunch.

Prawn Gyoza

Prawn gyoza for lunch! The girls favourite ❤️

Simple filling:

Small tin of water chestnuts blitz

1 packet of prawns (cooked) blitz

2-3 spring onions finely chopped

Pinch of chilli flakes

Drizzle of soya sauce and sesame oil

1tsp cornflour 

Mix together 

Fold into your gyoza wrappers

Fry for a few mins in about 1tbsp oil, then add 2-3 tbsp water with the lid on to steam 

Toppings: oyster sauce , sweet chilli and spring onions

Tip: u can freeze these. Use lots of cornflour for rolling the dough- don’t be afraid (I used 4-5 tbsp in total in a sieve) as you assemble dust some corn flour and let them rest on some greaseproof paper otherwise these will stick. Yields 30! (We ate all of them!)😂

Crepes

Why does our family get happy when it’s breakfast time 😂😂😂

I’ve been using this recipe for a while- but I use cups instead. 

1cup flour, 1.5 cups milk. I use a pinch of salt and sugar as we load it with Nutella or golden syrup! I stick everything in the blender , it’s important to let it rest for a bit! Mine only take less than a minute on each side and I use a nonstick pan – so I leave the butter out!

Serving options:

Banana, strawberries, blueberries, yoghurt, lemon and sugar, Nutella syrup. 

For savoury options , sundries tomato and mozzarella, garlic mushroom and spinach and cheddar, cheese and onion, or my favourite is left over roast chicken topped with cheese – perfect dinner!

Banana Muffins

Rainy day baking! And using the weeks left over bananas! Love banana bread but do prefer muffins! This recipe is a go to recipe! Extremely soft!

Tips: if u don’t have nutmeg can skip it out, the older the bananas the better, mix the dry and wet ingredients until JUST COMBINED. Cooking time does vary mine took 20 mins into total.
