Sticky Oven Baked Wings

Sticky oven baked wings- simply done!a family favourite in the house!

For 20-25 wings with skin
Marinate
2tbsp vinegar , 1tsp chilli powder (less if needed) chopped garlic 4-5 cloves finely chopped, 1/2 tsp cinnamon and 1 star anise , small dash of 1tbsp soya sauce (light and dark) black pepper

Sauce
2tbsp soya sauce, 2tbsp white vinegar ,2tbsp honey, 2tbsp ketchup 2tbsp sriracha.

1. Marinate chicken wings and leave in fridge overnight (minimum of few hours)

2.place in a non stick tray,Cover with foil and bake for 20 mins at 200 degrees, remove foil and cook for 10-15 min until skin is brown turning once in between

3. Mix all the sauce ingredients together

4. Brush the sauce onto the wings

5. Replace wings into oven for further 10-15 mins until crisp – you can re baste the chicken if you want too.

Tip:
use a disposable tray if you have or a non stick oven proof dish, if the wings get slightly stuck be patient and use a butter knife to ease the skin off the base of pan. Brushing is important rather than dumping the sauce so it crisps up nicely. You can always cook the remaining sauce in a small pan and use as a dipping sauce. You don’t need oil in this as the chicken wings give off a lot of fat.

Serving: perfect as a side dish for a family get together, or as a main with chips coleslaw or noodles, sweet potato wedges, onion rings or zucchini fries- take ur pick!

Beetroot Hummus

Beetroot hummus!how amazing is this colour and amazingly simple! I took inspo from saltandlavender when I was looking at her blog and itsallgoodvegan for her loaded hummus

I’ve used this recipe for a while it’s tailored to my pallete so you may have to play around the ingredients!

And it’s a mixture of 3-4 recipes together as above 

1 garlic clove

1/4 cup oil

1/3 cup tahini

1/4 cup fresh lemon juice

Ice cold water 

1 and half tin drained chickpeas

2 small ready cooked beetroot cut into chunks

Salt to taste

1. Blend oil tahini and garlic into a paste – add a couple of tbsp of ice cold water if you are struggling to blend

2. Add chickpeas lemon juice

3. Blend until smooth (I had to blend for 4 mins!)

4. Keep adding a few drops of water to help with consistency

5. Add your beetroot 

6. Add salt as needed

If you are not using a strong blender blend for 30 seconds on and off to stop your motor overheating . It’s tempting to blend it all together but the key is making The tahini fluffy first. Don’t use bottled lemon juice – this was a big big change I made and a tip from – inspired taste and cold water just helps with the blending! I don’t use olive oil as I never have in the house!

Topping : feta beetroot parsley 

The girls love dipping carrots into it! Or on a bagel , in a wrap with chopped veg! I use it during the week for hubbies salad!

No Churn Ice cream

Simple super easy 2 ingredients +no Churning = the smoothest ice cream!

I’ve used this recipe for years! So simple so easy! It’s a combination of good food and a Tesco recipe😂 

600ml whipping cream(if you get 2x300ml cartons- no measuring!)

1 tin condense milk (397g) 

1. Whip both until thick (spoonable thick)

2. Fold in your favourite crushed chocolate- we used crunchie here- 3 party size bars 

3. Place in a air tight container for at least 8 hours

Super simple super delicious! 

Other suggestions – crushed aero, caramel , I used this for my Oreo ice cream posted earlier, peppermint essence with chocolate chip, crushed salted pretzels (although the girls prefer this as a topping!)

Tips: don’t leave this ice cream out for too long only take out when serving it melts easily! I’ve tried making only half a recipe but it completely throws the balance off. The original recipe suggests vanilla but found the flavour over powering. This recipe we made approx 1 loaf tin and a small Tupperware. As a weekend activity I sometimes make a batch and each little gets their “make your own ice cream”

Scrambled Eggs

Who’s favourite?im teaching my little one her favourite brekkie with some tips!

The girls love scrambled eggs! But my dad makes the best ones! 

Tips: always crack eggs in a bowl (who wants crunch in soft eggs!) , lightly whisk, non stick POT , spray some oil only or use a kitchen towel to grease the pot. LOW heat add the eggs and stir with spatula or wooden spoon with long brushes or small Smooth circles, when 80% done add a little butter season and take off the heat. Eggs will continue to cook! Be patient on a low heat!

Vegetarian Bolognaise

Vegetarian “bolognese”

It’s left over day again! Empty that fridge with all your left over veg!

This version changes all the time! Today we had:

1.5 peppers (half yellow half red) cut into chunks

4- 5 tomatoes cut into chunks including cherry tomatoes

2 garlic cloves

1onion cut into chucks

7-8 mushrooms cut into chunks

3 medium carrots cut into chunks

1/2 tsp chilli flakes 

Pepper

2-3 tbsp parsley torn

1.Place everything in roasting tray with a little oil – bake at 200 for 30-40 mins turning in between if needed. Cook until carrots softened.

2. Boil 3 cups water to 1 veg stock cube (we used knorr)

3. Mix into veg

4. Place in blender and pulse to get a Chucky consistency. 

5. Cook pasta according to instructions reserve 1 mug of pasta water and drain the rest

6. Cook the pasta sauce as per your liking , add 1/2 mug pasta water , add your pasta and cook in the sauce for 3-4 mins , add cheese and salt cook and taste – adjust to your liking 

Served ours with cheese and grilled tomatoes

Side salad

Cook the sauce down if u find it too watery before adding pasta 

You do need to cook the pasta in the sauce for a while, you need to adjust the salt while cooking as the stock cube with hold lots too!

The chunky mushrooms make this dish!and tomatoes i(if u don’t have add a to tomato tin)

Oreo Ice Cream

Oreo ice cream!

Reminded me of vienneta! Perfect to take as a gift to someone’s house too (can’t wait for lockdown to be over!)

1ltre vanilla ice cream (keep out so slightly softened if using ready made ice cream)

I packet oreo

1 packet milk chocolate 

1tsp oil

1. Keep aside 2-3 Oreos and crush the rest into crumbs

2. Line a 1 litre loaf tin with the cling film overlapping and extra hanging over the edge of the pan

3. Prepare a large piece of grease proof paper on your work surface.

4. Break up your chocolate bar into a microwaveable bowl, add your oil and place in microwave to melt on intervals of 20 secs.

5. Pour your melted chocolate and spread finely into your greaseproof paper- leave to completely dry (careful if you are putting in the fridge as the paper will be very floppy!)ive sometimes done this first thing in the morning 

6. Pour 1/2 of your Oreo crumb into your softened ice cream and mix together

7. Pour a 1/4 of your ice cream mixture into your loaf pan, break some of your hardened chocolate chars place on top – repeat cycle. Leave a 2cm gap at the top of the pan. 

8. Top with remaining crumb (reserve some for decor in air tight container )

9. Wrap the overlapping cling film and place in the freezer on a flat shelf

10. Leave to freeze over night

11. Cut into slices to serve- can serve with berries crumbed Oreo or broken pieces of Oreo.

This recipe is amazing if u have a few left over tubs of ice cream and want to make something new!

Tips:

Baking does take approx 40 mins

It’s a very delicate cake so springform or push bottom tins is best

If u want a more golden colour pop under the grill for 2-3 seconds

Best eaten warm

Apple pieces I did in 1cm chunks I don’t like but pieces, and hand whisked the flour in in 3s(alternating with milk)

No rum – just warm milk

Buttermilk fried chicken

nstead of Sunday roast-Buttermilk fried chicken!

Recipe for 1 chicken in 8 pieces (I usually add an extra 2 drum sticks )

Marinate 

Buttermilk

1tsp garlic powder

Pepper 

1/2 tsp chilli flakes 

Flour 

1 cup plain flour

1 tsp salt

Pepper

1tsp lemon pepper

1tsp paprika

1 tsp cayenne pepper (can sub for 1/2 tsp chilli powder)

1tsp onion powder

1tsp garlic powder

1/2 tsp oregano (or any other herbs like parsley)

Prepare baking tray with greaseproof paper

1. Marinate chicken in the above ingredients and leave over night

2.Mix together the flour ingredients together 

3. Dip and firmly press each chicken piece into the flour mixture shake off excess and deep fry until coloured (5 mins)

4. Drain on tissue paper

5. Place on baking tray and bake for 35-45 mins on 190 (cooking time will be dependant on your oven)

Serving options :

Coleslaw and chips 

Roasted veg and roasted potatoes 

Potato gratin and veg

Mash and beans 

Salad 

Potato salad and corn on the cob

Banana Fritters

Left over bananas call for banana fritters! 

Although these turned out like mini doughnuts😂

Tip: we used 2.5 bananas, smaller chucks , warmed the milk slightly in the microwave. Took the butter out the night before so it was soft to beat! We added 1/2 flour and 1/2 the milk, mixed until just combined (by hand) then did the rest of the flour and milk- do not over beat! Leave mixture to sit. 

Oil a tablespoon and a teaspoon, scoop a tablespoon of mixture , using the teaspoon in the other hand “clean” the bottom of the tablespoon so to stop it dripping then slid the mixture off into the oil with ur teaspoon . This just stops the doughnuts having little bits hanging off.

Added: vanilla paste to the batter and cinnamon powder to the sugar. Drizzled with Nutella! Served with ice cream or custard!
