Turkish poached eggs

Such a simple meal!

Poached eggs with yoghurt and a chilli butter dressing!

Yogurt- needs to be a thick consistency with a pinch of cumin, little garlic (1/4 clove grated), a few springs of parsley and pinch ofsalt.

Butter:heat up 2 tbsp butter , large pinch of paprika and chilli flakes once slightly bubbling pour over eggs

Serve with crusty bread!

Fish burgers

Fillet o fish! So easy to make!baking varies – these took 25 mins at 180
, brioche buns tartare sauce and cheese are a must

Egg, Mayo (1/2cup), garlic powder, mustard salt pepper chilli flakes flour(2tbsp), lemon juice (1/2lemon)

My most favourite cake! (Apart from lemon) carrot and walnut cake! This is the hummingbird version from

A Massive Carrot Cake

I adjusted mine so had 100g chopped walnuts
Icing – I only used 200g icing sugar
I cooked mine for only 20 mins

Terry’s hot chocolate

Terry’s hot chocolate- really needed this after this week! It’s been a busy week at work!So simple to make -1/4 cupTerry’s chocolate chunks(works out to be be about 4-5 segments) to 1 full cup milk! Boil in a saucepan and top with whipped cream and marshmallows! I sieved this into my mug, top with whipped cream and marshmallow! Made with whole milk for the girls and almond milk for myself xxx

Baked sharwama recipe

Easy homemade sharwamma

4 pieces thigh fillet and 2 pieces chicken breast
1 tsp Ground Cinnamon ,Half cup Yogurt
2 tbsp Lemon juice ,pepper,Salt, Star aise,1 tsp Smoked paprika ,1 tsp Cumin ,1/2 tsp ground coriander 1 block crushed Garlic, 1 block crushed Ginger,Normal paprika 1 heaped
1/4 tsp Chilli flakes (use more if needed),1/4 cup Oil ,1/2 tsp dried Oregano
Handful chopped parsley, 1 onion cut into chucks

  1. Marinate the meat overnight in the above ingredients
  2. Use 3 skewers to Pearce the meat through. Keeping the chicken breasts in the middle
  3. Keep a slight gap between the meat
  4. Hang the skewers over a baking tray
  5. Put the remaining marinate over the meat
  6. Put the onions on the bottom of the tray
  7. Bake in oven for approx 40 mins on 200 degrees or until cooked thoroughly

Serving suggestions : chips, Lebanese bread, hummus pickled cabbaged gherkins red onions cucumber tomatoes chilli sauce, garlic Mayo

This recipe is perfect to marinate over night and grill ,you can put chips in the oven at the same time, if I know I’ve got a long week at work I marinate and freeze this and defrost the night before and pop in the oven when I get home.

Tips: if meat is browning too quickly pop some foil on top , if you want a more charred outside put under the grill for a few mins, double check your thigh fillets for any bones

Cauliflower Alfredo

Simple creamy sauce

Creamy Cauliflower Alfredo- sauce ready in 15 mins! An amazing hidden veg recipe and so simple.

250-275g frozen cauliflower florets
2 peeled garlic cloves
2tbsp finely chopped parsley
1cup grated cheese (cheddar)
1.5 cups milk
3tbsp butter
Salt pepper
Pinch chilli flakes

  1. Boil cauliflower and garlic in water until very soft

2 strain the cauliflower/garlic cloves and put into blender, add milk ,butter and 1/2 cup cheese

3 blend fully for at least 2 mins the longer you liquidise the smoother the sauce!

4 . Return sauce to pot add salt pepper chilli flakes , parsley .check salt you can add more cheese or salt if needed

  1. Cook pasta as per packaging, reserve 1 mug of pasta water , drain pasta and mix 1/2 cup pasta water into sauce at a time, use more if you want a thinner sauce
  2. Cook pasta in sauce for at least 2-3 mins

Serving toppings: cheese , croutons , roasted panko crumbs

Serving options: steam veg or side salad

Tips: adjust salt after adding cheese , you need to cook cauliflower until very soft, the sauce is supposed to be thick but thins out once you put pasta water, you need to cook the pasta in sauce and adjust the salt , I’ve used non diary milk and works just as well!most importantly liquidise the sauce for minimum 2-3 mins you don’t want lumpy cauliflower, a hand held blender doesn’t work as well. Sauce works well when made ahead, doesn’t freeze well.

Baked fish tacos

Fish tacos – ready to serve in 25 mins !

Fish taco! Oven baked and ready in 25mins ❤️
4 skinless cod fillets
1tsp paprika
1/2 tsp smoked paprika
1tsp cumin
1tbsp lemon juice
Large pinch of chilli flakes
3/4 tsp garlic powder
3tbsp oil
2tbsp chopped corinder
Salt pepper (season to ur own taste)

  1. Tap dry the fish (if defrosting leave over night in fridge)
  2. Season with salt and pepper both sides
  3. Mix all the other ingredients together and marinate fish
  4. Bake on greaseproof paper and greased oven proof dish on 200 degrees for 20-30 mins (dependant on how thick your cod fillets are)

Serve with

  1. Warm tortilla wrap (I wrapped mine in a damp towel and heated it in the microwave
  2. Pickled onion (sliced onion with a pinch of salt sugar and vinegar
  3. Crunchy red cabbage
  4. Lettuce (I know not very traditional !)
  5. Avocado
  6. Cucumber and tomatoes
  7. Sauces sriracha Mayo (Mayo with sriracha)
    and avocado sauce (1 avocado 2 tbsp mayo 3tbsp yoghurt salt and pepper and blend)

Pick your own toppings we have had sweet corn

Lasagne

Super easy! Looks like a lot of ingredients but this is a dump and leave recipe😂This meat mixture freezes well! And I usually have left over of this for a lunch.

1 large onion (or 2 medium) finely chopped

2 carrots , peeled and grated

1 stem celery, finely chopped

750g chicken mince

4 cloves garlic finely chopped

salt 

Pepper

1/2 tsp chilli flakes 

1/2 tsp ground cumin

1tsp paprika

Small handful parsley

Small handful coriander 

2 tins chopped tomatoes, liquidised

3tbsp ketchup

1/2 of a chicken stock cube 

Fresh lasagne sheet (see note)

1. 1/4 cup oil add onions celery and carrots – cook for 2-3 mins until slightly softened 

2. Add you mince and cook until the colour changes 

3. Add all your garlic and spices, tomato tins and ketchup and stock cube with 1/2 tin of water. Add parsley and coriander 

6. simmer for 30 mins until most of the liquid is evaporated and you are left with a THICK SAUCE Taste salt and adjust as needed

7leave to cool

Making homemade white sauce 

4tbsp butter,1/4 cup flour ,500ml milk (or almond milk)1/4 cup grated cheese

Salt to taste (I hardly put any because of the cheese)

Make double this recipe- it should be thick to coat the back of a spoon 

Melt better and flour together whisk, add a little milk and gradually add more cook until thick add cheese

Layer up :

1. Thin layer of Meat-white sauce lasagne sheet

2. Thin layer of Meat -white sauce lasagne sheet

3. Meat white sauce and cheese

Once layered 

Cook on 180 for 30 mins until done (you can check by piercing knife though the sheets of lasagne)

YOU MUST LEAVE the lasagne to rest outside of the oven 15-20mins before serving otherwise it will be runny

Notes:

1. ketchup- as tomato tins can be a little butter or sub for 1-2tsp sugar

2. Fresh lasagne sheets cook faster and I don’t like something that takes ages in the oven 😂

3. If the lasagne is browning quickly cover with foil and pierce a few holes. 

why my lasagne is runny?

1. The meat sauce was too saucy- you need to cook out the tomato

2. mixture was very hot and it steamed between the layers of lasagne 

3. You haven’t rested the lasagne after it came out the oven long enough!

4. Your mixtures won’t “dry out” in the oven1d

Masala Chips

Ooo hello comfort food…Masala chips, snack or meal?

Oil

3 spring onions finely chopped including whites

1/2 red pepper finely chopped 

2-3 garlic cloves finely chopped

2tvso finely chopped coriander 

1/2 cup passata 

2tbsp tomato sauce

2tbsp siraccha

Salt 

Pepper

1/2 tsp cumin

Large Dash lemon juice or tamarind

Pinch Hayder 

1/2 tsp chilli powder add more for spice

1/2 tsp paprika

Frozen chips

1. In a large frying pan – add oil spring onions peppers and garlic cloves for 1-2 mins 

2. Add all the other ingredients (I prefer doing this in small bowl and leaving it to one side so it’s easier when I’m cooking) 

3. Cut extra spring onion for garnishing 

Tip: you can oven bake the chips, masala can be made in advance but only mix with chips when serving! Add more chillies /lemon juice to your taste.

Warm Roasted Vegetable Soup

for a cosy autumn night in, super easy after a long day of work! We have this recipe far too often!

6-8 vines tomatoes cut into chunks

2 carrots peeled and cut into small chunks

1 red pepper(capsicum) cut into chunks

Pinch chilli flakes

2-3 garlic cloves (still in 

Few springs of parsley 

Placethe above in a roasting tray and roast for 25-35 mins with a little oil on 200 degrees until carrots are soft (keep your eye on this if your oven gets too hot)
