Lasagne

Super easy! Looks like a lot of ingredients but this is a dump and leave recipešŸ˜‚This meat mixture freezes well! And I usually have left over of this for a lunch.

1 large onion (or 2 medium) finely chopped

2 carrots , peeled and grated

1 stem celery, finely chopped

750g chicken mince

4 cloves garlic finely chopped

salt 

Pepper

1/2 tsp chilli flakes 

1/2 tsp ground cumin

1tsp paprika

Small handful parsley

Small handful coriander 

2 tins chopped tomatoes, liquidised

3tbsp ketchup

1/2 of a chicken stock cube 

Fresh lasagne sheet (see note)

1. 1/4 cup oil add onions celery and carrots – cook for 2-3 mins until slightly softened 

2. Add you mince and cook until the colour changes 

3. Add all your garlic and spices, tomato tins and ketchup and stock cube with 1/2 tin of water. Add parsley and coriander 

6. simmer for 30 mins until most of the liquid is evaporated and you are left with a THICK SAUCE Taste salt and adjust as needed

7leave to cool

Making homemade white sauce 

4tbsp butter,1/4 cup flour ,500ml milk (or almond milk)1/4 cup grated cheese

Salt to taste (I hardly put any because of the cheese)

Make double this recipe- it should be thick to coat the back of a spoon 

Melt better and flour together whisk, add a little milk and gradually add more cook until thick add cheese

Layer up :

1. Thin layer of Meat-white sauce lasagne sheet

2. Thin layer of Meat -white sauce lasagne sheet

3. Meat white sauce and cheese

Once layered 

Cook on 180 for 30 mins until done (you can check by piercing knife though the sheets of lasagne)

YOU MUST LEAVE the lasagne to rest outside of the oven 15-20mins before serving otherwise it will be runny

Notes:

1. ketchup- as tomato tins can be a little butter or sub for 1-2tsp sugar

2. Fresh lasagne sheets cook faster and I don’t like something that takes ages in the oven šŸ˜‚

3. If the lasagne is browning quickly cover with foil and pierce a few holes. 

why my lasagne is runny?

1. The meat sauce was too saucy- you need to cook out the tomato

2. mixture was very hot and it steamed between the layers of lasagne 

3. You haven’t rested the lasagne after it came out the oven long enough!

4. Your mixtures won’t ā€œdry outā€ in the oven1d
